Daring antics in the produce department

Like many people, I tend to get the same things over and over at the grocery store. Every once in a while though, I remind myself to try something new. Or at least a variation on something I already like. The produce department is one of the best places to do this. Vegetables contain many vitamins and minerals that support health. The fiber in vegetables is good for gut health and varying the vegetables we eat encourages the growth of a variety of beneficial gut bacteria.

Yesterday in the produce department,

I stumbled on a white fleshed sweet potato, a boniato. The little sign on the shelf said that it’s from Puerto Rico. The internet offers the alternative name, Cuban Yam. I’d never heard of it before. It’s about to make the acquaintance of my Instant Pot. I’m excited for lunch tomorrow. Clearly, I need to get out more.
